This pasta perfection of buttered noodles mixed with Chef’s World Famous Sauce, covered with layers of mozarella cheese, then broiled to a crisp golden brown, has been on the menu at 291 Seneca Street since 1962. It continues to be one of the most popular dishes of choice that millions have enjoyed there for over 60 years.
The story of how “Spaghetti Parm” came to be is one of legend.
In 1962 the host of WKBW-TV Channel 7’s children’s show “Rocketship 7” Dave Thomas ( his real last name is Boreanaz), and later host of “Dialing For Dollars,” was having lunch with Chef’s owner Lou Billittier. They wanted to try something different instead of their usual spaghetti dinner. That’s when they began to experiment. Lou added some butter, then Dave added the cheese on top. Brilliantly they decided to melt the cheese in the broiler over the pasta. The next thing they knew, they had invented a dish that would grow to be a staple at Chef’s Restaurant….”Spaghetti Parm!” Dave and Lou were forever “melted” together during that cold afternoon in ’62.

Now the next generation continues the “Spaghetti Parm” story.
Dave moved on to WPVI-TV Channel 6 in Philadelphia as a top weatherman in 1978 ( known as Dave Roberts there), soon after his son David Jr. was born in Buffalo. Lou Billittier Sr. and his wife Ann had two children of their own, Lou Jr., and Mary Beth. who worked tirelessly in the shadow of their parents as they mentored them in the operation of the restaurant. After Lou’s passing in 2000, and Ann in 2013, Lou and Mary Beth continued their legacy.
It was in 2025 that history repeated itself…this time when Dave’s son David Boreanaz ( the popular actor from shows like “Buffy the Vampire Slayer,” “Angel”, “Bones,” and “S.E.A.L Team” ) connected with Lou Jr. and Mary Beth around the very same table at Chef’s their parents sat at to figure out how to take “Spaghetti Parm” to the next level. Their idea? Create a new line of Chef’s Frozen Food products featuring “Spaghetti Parm,” and other Italian American favorites.
David Boreanaz is part of the Chef’s Frozen Foods team not just in name only. He works with Lou and Mary Beth on development with everything from the recipe, to packaging, and promotion…all while continuing his successful acting career as one of the biggest stars in Hollywood.
